Moroccan cooking is as much about method as it is about the recipe: the balance of spices, the patient cooking of a tagine and the way a meal is shared at the table. In a riad kitchen in Marrakech, a local chef guides the group through the ingredients and techniques behind a seasonal menu. The class can begin with a short market visit, then moves to the kitchen for hands-on preparation, a mint-tea pause and the meal you have cooked together.

How the trip runs

  1. Spice market walk

    Meet your chef near the souk. Smell, grind and discuss the spices used in a Moroccan kitchen.

  2. Welcome in the riad

    Walk through the riad, meet the team, and get a glass of mint tea while the ingredients are laid out.

  3. Cooking session

    Prepare and cook the tagine, the couscous and the pastilla. Your chef demonstrates once, then works station to station with you.

  4. Plating and tea

    Plate what you cooked, learn the mint tea ritual, and write down the notes you want to take home.

  5. Long lunch

    Sit down to the full menu you made, with bread from the local bakery and as much mint tea as you like.

Good to know

  • Start time is fixed The class always starts at 09:00 so the group can cook and eat together. If you need a later arrival, ask for the 14:00 session.
  • Tell us about allergies Nuts, gluten and shellfish are common in Moroccan cooking. Tell us in the booking notes so the chef can adapt the menu.
  • Vegetarian and vegan Vegetarian and vegan menus can be prepared when requested in advance. Tell us your preferences in the booking notes so the chef can plan the ingredients.
  • Ages in the kitchen From 8 years old with an adult at the same station. Under 8s can join with a dedicated helper and a smaller task.
  • Language The class runs in English and French. German, Spanish and Arabic are available on request.
  • Relaxed atmosphere It is a class, not an exam. Nothing is graded and there is no wrong way to fold a pastilla.
  • You will be full Plan a light dinner afterwards. The lunch alone is a full meal for most people.
  • Take the recipes home Every recipe is printed and handed to you at the end, measured for two people with metric quantities.

Common questions

Will I actually cook, or just watch?

You cook everything. The chef demonstrates each dish once, then you do it yourself at your own station with hands-on help. The only things you will not cook yourself are the bread and the tea.

Is the food halal?

The class uses Moroccan ingredients and can be adapted to your dietary needs. Please include any halal, vegetarian, vegan or allergy requirements in your booking notes so the chef can confirm the menu.

Can vegetarians and vegans join?

Yes. The chef can adapt the menu with seasonal vegetables, chickpeas or lentils when this is requested in advance, while keeping the same Moroccan cooking techniques.

What if I have a food allergy?

Tell us in the booking notes and the chef will remove the allergen and adapt the dish. Common ones in Moroccan cooking are nuts, gluten, sesame and shellfish.

Is pickup included from my riad?

Pickup is included within the medina, from your riad door to the kitchen. Outside the medina it is a short taxi ride we can arrange on request.

Is this suitable for children?

From 8 years old, at the same station as an adult. Younger children can join with a helper and a simpler task such as shaping the pastilla or stirring the couscous.

How long is the class?

Four hours including the market walk, from 09:00 to about 13:00. Most of it is hands-on, with a 60-minute lunch at the end.

Do I need to book well in advance?

Yes, the morning sessions sell out several days ahead, especially in spring and autumn. Send your request from the booking form and we confirm within 24 hours.
